The Third Industrial Revolution

Jeremy Rifkin

The Industrial Revolution, powered by oil and other fossil fuels, is spiraling into a dangerous endgame. The price of gas and food are climbing, unemployment remains high, the housing market has tanked, consumer and government debt is soaring, and the recovery is slowing. Facing the prospect of a second collapse of the global economy, humanity is desperate for a sustainable economic game plan to take us into the future. Here, Jeremy Rifkin explores how Internet technology and renewable energy are merging to create a powerful Third Industrial Revolution. He asks us to imagine hundreds of millions of people producing their own green energy in their homes, offices, and factories, and sharing it with each other in an energy internet, just like we now create and share information online. Rifkin describes how the five-pillars of the Third Industrial Revolution will create thousands of businesses, millions of jobs, and usher in a fundamental reordering of human relationships, from hierarchical to lateral power, that will impact the way we conduct commerce, govern society, educate our children, and engage in civic life. Rifkins vision is already gaining traction in the international community. The European Union Parliament has issued a formal declaration calling for its implementation, and other nations in Asia, Africa, and the Americas, are quickly preparing their own initiatives for transitioning into the new economic paradigm. The Third Industrial Revolution is an insiders account of the next great economic era, including a look into the personalities and players heads of state, global CEOs, social entrepreneurs, and NGOs who are pioneering its implementation around the world.

In addition, Mestia, the capital of Svaneti, now has an airport and two ski resorts. Also new for this edition is expanded information on Tusheti and the Trans Caucasian Trail, a volunteer-led project to create two long-distance hiking routes, east-west and north-south, linking the Black Sea with the Caspian, the Greater Caucasus with the Lower Caucasus and Georgia with Armenia and Azerbaijan. The Georgian wine industry is covered, with particular emphasis on natural qvevri wines, and so too are skiing, rugby, the World Heritage sites of Mtskheta and Gelati, Georgian food, fifth-century churches, cave cities, and Georgian polyphonic singing. Cover of The end of animal farming

The end of animal farming

Jacy Reese

"Michael Pollan's The Omnivore's Dilemma and Jonathan Safran Foer's Eating Animals brought widespread attention to the disturbing realities of factory farming. The End of Animal Farming pushes this conversation forward by outlining a strategic roadmap to a humane, ethical, and efficient food system in which slaughterhouses are obsolete--where the tastes of even the most die-hard meat eater are satisfied by innovative food technologies like cultured meats and plant-based protein. Social scientist and animal advocate Jacy Reese analyzes the social forces leading us toward the downfall of animal agriculture, the technology making this change possible for the meat-hungry public, and the activism driving consumer demand for plant-based and cultured foods. Reese contextualizes the issue of factory farming--the inhumane system of industrial farming that 95 percent of farmed animals endure--as part of humanity's expanding moral circle. Humanity increasingly treats nonhuman animals, from household pets to orca whales, with respect and kindness, and Reese argues that farmed animals are the next step. Reese applies an analytical lens of "effective altruism," the burgeoning philosophy of using evidence-based research to maximize one's positive impact in the world, in order to better understand which strategies can help expand the moral circle now and in the future. The End of Animal Farming is not a scolding treatise or a prescription for an ascetic diet. Reese invites readers--vegan and non-vegan--to consider one of the most important and transformational social movements of the coming decades."--Publisher's description.

Ren Behan

"In this refreshing approach to Polish cuisine, food writer and blogger Ren Behan takes us on a journey to discover the new tastes of her beloved culinary heritage. The food of Eastern Europe, long misunderstood in the West, is changingthe focus is swinging away from heavy dumplings and stews towards lighter, healthier, fresh and seasonal recipes, served in contemporary ways. In this beautiful collection of recipes, Ren brings us the very best of the Polish kitchen, inspired both by the food of her childhood and by the new wave of flavors to be found in the trendy restaurants, cafes and farmers markets of modern Poland. Alternative grains, such as rye, spelt, buckwheat and millet make an appearance in risottos, as do fresh fruit preserves and pickles, infused honeys, seasonal and raw salads, light broths, delicious cakes and flavored liqueurs. No book on Polish food would be complete without pierogi, the classic dumplings, and of course they are here, with other substantial dishes such as meatballs, goulash and cutlets, as you might expect, but you will also see them in a new lightfilled with strawberries and served with honey and pistachios. Pink sauerkraut adorns vegan pastry rolls, ribs are slowly-braised with honey and vodka, a fresh cucumber salad with sour cream and dill sets off a homely dish of meatballs, and Polish charcuterie sits atop the darkest rye bread. An evocative and inspiring collection of recipes, which truly celebrates all the good things the food of Poland has to offer, and which will leave your mouth watering." --

Cover of Discriminating taste

Discriminating taste

S. Margot Finn

For the past four decades, increasing numbers of Americans have started paying greater attention to the food they eat, buying organic vegetables, drinking fine wines, and seeking out exotic cuisines. Yet they are often equally passionate about the items they refuse to eat: processed foods, generic brands, high-carb meals. While they may care deeply about issues like nutrition and sustainable agriculture, these discriminating diners also seek to differentiate themselves from the unrefined eater, the common person who lives on junk food. Discriminating Taste argues that the rise of gourmet, ethnic, diet, and organic foods must be understood in tandem with the ever-widening income inequality gap. Offering an illuminating historical perspective on our current food trends, S. Margot Finn draws numerous parallels with the Gilded Age of the late nineteenth century, an era infamous for its class divisions, when gourmet dinners, international cuisines, slimming diets, and pure foods first became fads. Examining a diverse set of cultural touchstones ranging from Ratatouille to The Biggest Loser, Finn identifies the key ways that “good food” has become conflated with high status. She also considers how these taste hierarchies serve as a distraction, leading middle-class professionals to focus on small acts of glamorous and virtuous consumption while ignoring their class’s larger economic stagnation. A provocative look at the ideology of contemporary food culture, Discriminating Taste teaches us to question the maxim that you are what you eat.--Publisher website.

Elisabeth Luard

This is a cookery book with a strong travel bias, dealing with each of Andalucia's eight provinces in turn to provide a personal, geographical and culinary survey of the area. It shows how the land itself and historical events have influenced the culinary tradition of the region, with its intriguing combination of hearty peasant fare and the delicate seasonings that are a legacy of the Moorish invasions. Each province draws on its own magnificent natural larder, and the recipes, such as hot gazpacho from Huelva, salt cod with potatoes and peppers from Jaén, pork and beans with chard from Seville, and chickpea and wheat soup from Almería, reflect this diversity. The author lived in the area for several years. Her personal reminiscences are interwoven with a wealth of cultural and historical information, and the text is accompanied by the author's own watercolors of dishes, places and scenes of Andalucian life.

Taste is recognized as one of the most evocative senses. The flavors of food play an important role in identity, memory, emotion, desire, and aversion, as well as social, religious and other occasions. Yet despite its fundamental role, taste is often mysteriously absent from discussions about food. The Taste Culture Reader examines the sensuous dimensions of eating and drinking and highlights the centrality of taste in human experience. Combining both classic and contemporary sources from anthropology, philosophy, sociology, history, science, and beyond, the book features excerpts from texts by David Hume, Immanuel Kant, Pierre Bourdieu, Brillat-Savarin, Marcel Proust, Sidney Mintz, and M.F.K. Fisher as well as original essays by authors such as David Sutton, Lisa Heldke, David Howes, Constance Classen, and Amy Trubek. This edition has been revised substantially throughout to include the latest scholarship on the senses and features new introductions from the editor as well as 10 new chapters.

Cover of What she ate

What she ate

Laura Shapiro

"A beloved culinary historian's short takes on six famous women through the lens of food and cooking--what they ate and how their attitudes toward food offer surprising new insights into their lives. Everyone eats, and food touches on every aspect of our lives--social and cultural, personal and political. Yet most biographers pay little attention to people's attitudes toward food, as if the great and notable never bothered to think about what was on the plate in front of them. Once we ask how somebody relates to food, we find a whole world of different and provocative ways to understand her. Food stories can be as intimate and revealing as stories of love, work, or coming-of-age. Each of the six women in this entertaining group portrait was famous in her time, and most are still famous in ours; but until now, nobody has told their lives from the point of view of the kitchen and the table. It's a lively and unpredictable array of women; what they have in common with one another (and us) is a powerful relationship with food. They include Dorothy Wordsworth, whose food story transforms our picture of the life she shared with her famous poet brother; Rosa Lewis, the Edwardian-era Cockney caterer who cooked her way up the social ladder; Eleanor Roosevelt, First Lady and rigorous protector of the worst cook in White House history; Eva Braun, Hitler's mistress, who challenges our warm associations of food, family, and table; Barbara Pym, whose witty books upend a host of stereotypes about postwar British cuisine; and Helen Gurley Brown, the editor of Cosmopolitan, whose commitment to "having it all" meant having almost nothing on the plate except a supersized portion of diet gelatin"--

Food and agriculture during the Civil War

R. Douglas Hurt

The explosion of recent Civil War history titles has focused incisively on why soldiers fought, how their commanders mobilized their troops, and the war's bigger meaning within the American national and international contexts. Yet not since Paul W. Gates's classic work Agriculture and the Civil War (1965) has any historian asked what soldiers and those on the home front ate; how civilians produced and marketed foodstuffs during a devastating civil war; how the conflict impeded, encouraged, or altered agriculture, North and South; and how it impacted the world of land owners and farm laborers. The Civil War revolutionized the agricultural labor system in the South, and it had dramatic effects on farm labor in the North relating to technology. Agriculture also was an element of power for both sides during the Civil War--one that is often overlooked in traditional studies of the conflict. R.^ Douglas Hurt argues that Southerners viewed the agricultural productivity of their region as an element of power that would enable them to win the war, while Northern farmers considered their productivity not only an economic benefit to the Union and enhancement of their personal fortunes but also an advantage that would help bring the South back into the Union. This fascinating study by one of America's foremost agricultural historians examines the effects of the Civil War on agriculture for both the Union and the Confederacy from 1861 to 1865, emphasizing how agriculture directly related to the war effort in each region--for example, the efforts made to produce more food for military and civilian populations; attempts to limit cotton production; cotton as a diplomatic tool; the work of women in the fields; slavery as a key agricultural resource; livestock production; experiments to produce cotton, tobacco, and sugar in the North; and the adoption of new implements.^ Food and Agriculture during the Civil War fills a major void in Civil War scholarship and introduces the economic and social history of agricultural staples to 21st-century readers. Like today, Civil War-era armies reflected the societies they serve. Hurt's book offers deep insights into the communities that spawned soldiers blue and gray and that tranformed America into a permanent Union based on free labor. -- Inside jacket flaps.
